Ingredients
  

Protein
  • 2 large boneless skinless chicken breasts, cut into bite-sized pieces - can use frozen
  • 1 medium finely chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon cumin
  • 0.25 tsp black pepper
  • 1 can (4.5 oz) chopped green chiles, undrained
  • 1 can (15 oz) cannellini beans, rinsed and drained such as Goya
  • 2 can (14 oz) fat-free, less-sodium chicken broth
  • 4 tablespoons nonfat plain Greek Yogurt
Toppings
  • to taste Cheddar Cheese
  • to taste Corn
  • to taste Cilantro

Method
 

  1. Set Instant Pot to sauté, heat olive oil, add onion, and cook for 3–4 minutes until soft.
  2. Add garlic, green chiles, cumin, and black pepper; cook for 1 minute.
  3. Add beans, chicken, and broth; bring to a simmer and cook for 15 minutes.
  4. Turn off heat, stir in Greek yogurt until smooth.
  5. Ladle into bowls, top with cheese, corn, and cilantro as desired.

Notes

For extra flavor, add a squeeze of lime or hot sauce.
