Method
- Set Instant Pot to sauté, heat olive oil, add onion, and cook for 3–4 minutes until soft.
- Add garlic, green chiles, cumin, and black pepper; cook for 1 minute.
- Add beans, chicken, and broth; bring to a simmer and cook for 15 minutes.
- Turn off heat, stir in Greek yogurt until smooth.
- Ladle into bowls, top with cheese, corn, and cilantro as desired.
Notes
For extra flavor, add a squeeze of lime or hot sauce.
