Method
- Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
- In a large bowl, whisk together whole wheat flour, all-purpose flour, sugar, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the raisins or currants (if using).
- Add the buttermilk and stir until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For a richer flavor, use brown sugar instead of granulated sugar.
