  • 1 1/2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold butter cut into small pieces
  • 1 cup buttermilk
  • 1/2 cup raisins or currants optional

Method
 

  1. Preheat oven to 400°F (200°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together whole wheat flour, all-purpose flour, sugar, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the raisins or currants (if using).
  5. Add the buttermilk and stir until just combined. Do not overmix.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a richer flavor, use brown sugar instead of granulated sugar.
