- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- Cream butter and sugar until fluffy. Beat in egg and vanilla.
- Mix mashed bananas into the wet mixture. Whisk dry ingredients and combine.
- Fold in nuts if using. Pour batter into pan.
- Bake for 50-60 minutes. Cool before slicing.
