Ingredients

  • 2 medium-large very ripe bananas, mashed about 1 cup
  • 1/3 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. Cream butter and sugar until fluffy. Beat in egg and vanilla.
  3. Mix mashed bananas into the wet mixture. Whisk dry ingredients and combine.
  4. Fold in nuts if using. Pour batter into pan.
  5. Bake for 50-60 minutes. Cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
