Ingredients
  

Green Beans
  • 1 pound fresh green beans, trimmed
  • 1 cup mushrooms, sliced
  • 1 cup low-fat cream of mushroom soup
  • 1/2 cup greek yogurt
  • 1/2 cup low-sodium vegetable broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup crispy onions (for topping)
  • 1/2 cup shredded cheddar cheese (optional)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Blanch green beans for 3-5 minutes, drain.
  3. Sauté mushrooms until softened.
  4. Mix soup, yogurt, broth, garlic, onion, and pepper; add green beans and mushrooms.
  5. Transfer to baking dish, top with crispy onions and cheese, then bake 25-30 mins.

Notes

For extra flavor, add a pinch of thyme or paprika.
