  • 3 to 4 pieces ripe bananas, mashed
  • 1/2 cup melted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a 9x5-inch loaf pan by greasing or lining with parchment.
  2. Mash bananas thoroughly. Mix in melted butter and sugar until smooth. Beat in eggs and vanilla.
  3. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Fold dry ingredients into wet mixture gently.
  4. If using nuts, fold them into the batter. Pour batter into prepared pan and smooth the top.
  5. Bake for 55-65 minutes until a toothpick inserted in the center comes out clean. Cool before slicing.

Notes

For extra flavor, toast the nuts before folding them into the batter.
