Method
- Prep: Toast nuts (350°F/7 mins). Whisk wet ingredients 3 mins.
- Mix: Fold dry into wet in 3 batches. Add carrots/nuts.
- Bake: 350°F for 35 mins (rotate at 15 mins).
- Cool: 10 mins in pan → rack. Frost when cool.
Notes
For a richer flavor, consider adding a pinch of nutmeg to the dry ingredients.
