Wet
  • 3 eggs room temp
  • 1 cup vegetable oil
  • 1 cup brown sugar
  • 1 tsp vanilla
  • 2 cups grated carrots
Dry
  • 2 cups flour
  • 1 tsp baking soda
  • 1.5 tsp cinnamon
  • 0.5 tsp salt
  • 1 cup toasted walnuts
Frosting
  • 8 oz cream cheese
  • 4 tbsp butter
  • 2 cups powdered sugar

Method
 

  1. Prep: Toast nuts (350°F/7 mins). Whisk wet ingredients 3 mins.
  2. Mix: Fold dry into wet in 3 batches. Add carrots/nuts.
  3. Bake: 350°F for 35 mins (rotate at 15 mins).
  4. Cool: 10 mins in pan → rack. Frost when cool.

Notes

For a richer flavor, consider adding a pinch of nutmeg to the dry ingredients.
