Ingredients
  

Bananas
  • 3 ripe bananas ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 1/2 cup brown sugar
  • 2 large eggs beaten eggs
  • 1 1/2 cups gluten free all-purpose flour
  • 1/2 teaspoon cinnamon (optional)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas with melted coconut oil.
  3. Stir in vanilla, eggs, baking soda, salt, and sugar.
  4. Add gluten-free flour and cinnamon; mix until just combined.
  5. Fold in walnuts or chocolate chips if using, then pour into pan.
  6. Bake for 50-60 minutes; cool before slicing.
