Ingredients
  

Dairy and Oils
  • 5 tablespoons unsalted butter or coconut oil
  • ½ cup honey or pure maple syrup
  • 1 ¾ cups mashed ripe banana about 3 ½ large or 5 medium bananas
  • 2 eggs eggs
Leavening and Seasonings
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla extract
Flour
  • 2 cups white whole wheat flour or all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C). Prepare a loaf pan with parchment paper.
  2. Melt butter or coconut oil and whisk with honey, mashed bananas, and eggs until smooth.
  3. Add baking soda, salt, cinnamon, and vanilla; mix well.
  4. Stir in flour until just combined. Pour batter into prepared pan.
  5. Bake for 55-65 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Cover loosely with foil if the top over-browns during baking.
