Ingredients
  

Bananas
  • 3 large ripe bananas, mashed about 1 ½ cups or 375g
Oil
  • 0.5 cup vegetable oil or canola oil
Sugar
  • 0.75 cup light brown sugar, packed
Eggs
  • 2 large eggs, at room temperature
Vanilla Extract
  • 1.5 teaspoons vanilla extract
Sour Cream
  • 0.5 cup sour cream or full-fat Greek yogurt
Flour
  • 1.75 cups all-purpose flour
Baking Powder
  • 1 teaspoon baking powder
Baking Soda
  • 0.5 teaspoon baking soda
Salt
  • 0.5 teaspoon salt
Ground Cinnamon
  • 0.5 teaspoon ground cinnamon (optional, but recommended!)
Chocolate Chips
  • 1 cup semisweet or milk chocolate chips, plus extra for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line a muffin tin.
  2. Mix mashed bananas, oil, sugar, eggs, vanilla, and sour cream.
  3. Combine dry ingredients and fold into wet mixture. Add chocolate chips.
  4. Divide batter into muffin cups, top with extra chips.
  5. Bake at 375°F (190°C) for 5 minutes, then reduce to 350°F (175°C) and bake 15-20 minutes.
  6. Cool muffins in pan 5 minutes, then transfer to wire rack.

Notes

For extra flavor, sprinkle additional chocolate chips on top before baking.
