Method
- Preheat oven to 375°F (190°C). Line a muffin tin.
- Mix mashed bananas, oil, sugar, eggs, vanilla, and sour cream.
- Combine dry ingredients and fold into wet mixture. Add chocolate chips.
- Divide batter into muffin cups, top with extra chips.
- Bake at 375°F (190°C) for 5 minutes, then reduce to 350°F (175°C) and bake 15-20 minutes.
- Cool muffins in pan 5 minutes, then transfer to wire rack.
Notes
For extra flavor, sprinkle additional chocolate chips on top before baking.
