  • 1/3 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, applesauce, and vanilla in a bowl.
  3. Combine dry ingredients and gradually add to wet mixture.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 50-60 minutes, cool before serving.
