  • 1 box vanilla cake mix (15.25 oz)
  • 3 large eggs at room temperature
  • 1/3 cup vegetable oil
  • 1 cup buttermilk or regular milk with lemon juice
  • 1/2 cup strawberry puree about 1 cup fresh strawberries, blended and strained
For the Strawberry Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 4 cups powdered sugar
  • 1/4 cup freeze-dried strawberry powder or 3 tablespoons strawberry puree
  • 1 teaspoon vanilla extract
  • Pinch salt
  • 1-2 tablespoons heavy cream if needed for consistency

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour cake pans.
  2. Combine cake mix, eggs, oil, buttermilk, and strawberry puree; beat until smooth. Divide batter into pans and bake for 25-30 minutes.
  3. Let cakes cool for 10 minutes before transferring to wire racks.
  4. Beat cream cheese and butter until fluffy. Gradually add powdered sugar, strawberry powder, vanilla, and salt. Adjust with heavy cream if needed.
  5. Layer cake with frosting, topping with strawberries and decorative touches as desired.

Notes

For best results, use fresh strawberries for puree and ensure frosting is smooth before applying.
