Ingredients
  

Rice
  • 2 cups uncooked rice
Broccoli
  • 2 small heads broccoli (chopped)
Chicken
  • 3 large chicken breasts
Sauces and oils
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with water sub cornstarch
  • 1/2 cup mayo
  • 1 tbsp sriracha
  • 2-3 tbsp water for mayo
Toppings
  • to taste sesame seeds for topping

Method
 

  1. Cook rice and set aside.
  2. Chop broccoli and set aside.
  3. Season chicken, cook in oil until golden and cooked through.
  4. Steam or sauté broccoli until tender, then add sauce and simmer until thickened.
  5. Mix mayo, sriracha, and water to make spicy mayo.
  6. Assemble bowls with rice, chicken, broccoli, drizzle spicy mayo, and top with sesame seeds.

Notes

Use fresh ingredients for best flavor. Adjust spice level with sriracha.
