Ingredients
  

Dry ingredients
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
Wet ingredients
  • 1 egg egg
  • 1 1/8 cup sugar
  • 1/2 cup vegetable oil
  • 2 tablespoons buttermilk
  • 1 teaspoon vanilla
Bananas
  • 3 extra ripe bananas bananas mashed
  • 1/2 cup chopped walnuts

Method
 

  1. Preheat oven to 325°F (160°C). Line a loaf pan with parchment and spray with nonstick spray.
  2. Mix dry ingredients: flour, baking soda, salt, and cinnamon.
  3. Whisk egg, sugar, and oil until combined.
  4. Add dry ingredients to wet, then mix in mashed bananas, buttermilk, and vanilla.
  5. Pour batter into pan, sprinkle walnuts on top, and bake for 60-75 minutes.

Notes

Use ripe bananas for best flavor and mash well before adding.
