Method
- Preheat oven to 350°F (175°C). Grease an 8x8 pan.
- Cream butter and 1 cup brown sugar until fluffy. Mix in bananas, eggs, sourdough discard, vanilla, baking soda, salt, cinnamon, and flour.
- Pour batter into pan. Mix pecans and brown sugar for topping, then sprinkle over batter.
- Bake for 55-60 minutes until a toothpick comes out clean. Cool slightly before slicing.

Store leftovers in an airtight container for up to 3 days.
