Sourdough Discard Banana Bread

Ingredients

  • 1 stick butter, softened
sugar
  • 1 cup brown sugar
  • 2 eggs
  • 4-5 mashed ripe bananas
  • 1 tsp vanilla extract
  • 1/2 cup sourdough starter discard
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 3/4 cups all purpose flour
  • 1 cup chopped pecans
  • 1/3 cup brown sugar

Method
 

  1. Preheat oven to 350°F (175°C). Grease an 8x8 pan.
  2. Cream butter and 1 cup brown sugar until fluffy. Mix in bananas, eggs, sourdough discard, vanilla, baking soda, salt, cinnamon, and flour.
  3. Pour batter into pan. Mix pecans and brown sugar for topping, then sprinkle over batter.
  4. Bake for 55-60 minutes until a toothpick comes out clean. Cool slightly before slicing.

Store leftovers in an airtight container for up to 3 days.
