Simple Vegan Pumpkin Banana Bread

Ingredients
  

Dry ingredients
  • 1 1/2 cups plain flour
  • 1 tsp pumpkin spice blend
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch pink Himalayan salt
Wet ingredients
  • 2 large ripe bananas about 280g or 1 heaping cup mashed
  • 1/2 cup canned pumpkin purée a slightly heaped 120g
  • 1/2 cup coconut sugar or packed brown sugar
  • 1/4 cup melted refined coconut oil
  • 2 tbsp plant-based milk

Method
 

  1. Preheat oven to 350ºF (175ºC). Line and grease your loaf pan.
  2. Mix dry ingredients in a bowl. Mash bananas and combine with pumpkin, sugar, oil, and milk.
  3. Fold dry ingredients into wet mixture until just combined. Add mix-ins if desired.
  4. Pour batter into pan and bake for 40-50 minutes until a toothpick comes out clean.
  5. Cool in pan for 10-15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!

Notes

Store in an airtight container for up to 3 days at room temperature or a week in the fridge.
