Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 medium ripe bananas, mashed
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. Cream butter and sugar, then add eggs and vanilla.
  3. Stir in mashed bananas. Combine wet and dry ingredients until just mixed.
  4. Pour batter into pan and bake for 50-60 minutes. Cool before slicing.
