Dough
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • powdered sugar for dusting powdered sugar

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy, add vanilla.
  3. Mix in flours and salt to form dough. Chill for 30 mins.
  4. Roll out dough, cut cookies, and create centers for half.
  5. Bake 10-12 mins, cool, assemble with jam, dust with powdered sugar.
