Ingredients
  

Vegetables
  • 2 medium sweet potatoes, peeled and diced
  • 3 large carrots, peeled and sliced
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • optional Fresh cilantro for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion and garlic until softened, about 5 minutes.
  3. Add sweet potatoes and carrots; cook for 5 minutes.
  4. Stir in cumin, ginger, salt, and pepper; pour in broth and simmer for 20 minutes.
  5. Puree the soup until smooth and serve hot, garnished with cilantro if desired.

Notes

For a creamier texture, blend the soup longer or add a splash of coconut milk.
