Quick Sourdough Discard Garlic Knots

These garlic knots are a delicious way to use up sourdough discard. They're quick to make and perfect as a side dish or snack.

Ingredients
  

Dough
  • 2 cups sourdough discard
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
Flavoring
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
Topping
  • 1/4 cup grated Parmesan cheese
  • 1 egg for egg wash, optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Combine sourdough discard, flour, and salt until a dough forms.
  3. Add olive oil, minced garlic, oregano, and thyme, mixing until well incorporated.
  4. Divide the dough into equal pieces and shape each piece into a knot.
  5. Place knots on a baking sheet lined with parchment paper.
  6. Brush with egg wash, if using, and sprinkle grated Parmesan on top.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Remove from the oven and let cool slightly before serving.

Notes

For a richer flavor, use garlic-infused olive oil.
