Ingredients

  • 3 medium Ripe Bananas (Mashed) about 1 cup total
  • 1 cup Granulated Sugar
  • 2 large Eggs
  • 1 cup All-Purpose Flour
  • 1/3 cup Cocoa Powder (Unsweetened)
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Vegetable Oil
  • 1/2 cup Chocolate Chips (Optional, semi-sweet or dark)

Method
 

  1. Preheat oven to 350°F (175°C). Mash bananas and mix with sugar.
  2. Add eggs and oil, mix well. Sift dry ingredients and combine with wet mixture.
  3. Fold in chocolate chips if using. Pour batter into a greased 8x8 inch pan.
  4. Bake for 25-30 minutes until a toothpick comes out moist.
  5. Cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For extra flavor, add a handful of chopped nuts or a swirl of peanut butter before baking.
