Protein Baked Oats

Ingredients
  

Dairy & Liquids
  • 1 ¾ cups milk (dairy or plant-based)
  • 3 large eggs brought to room temperature
  • 1 ½ teaspoon pure vanilla extract
Fruits
  • 1 ½ cups mashed overripe bananas
Nut Butters & Spreads
  • ½ cup natural peanut butter
  • 2 tablespoons natural peanut butter
Sweeteners
  • ½ cup maple syrup
Dry Goods
  • 3 cups old fashioned oats (rolled oats)
  • ½ teaspoon salt
  • ½ cup peanut butter powder
  • ½ cup vanilla or unsweetened protein powder or collagen powder reduce maple syrup to ⅓ cup if used sweetened
  • ½ cup semi-sweet chocolate chips or blueberries
  • 2 tablespoons semi-sweet chocolate chips
Oils & Fats
  • 1 ¼ teaspoons melted coconut oil (divided)

Method
 

  1. Preheat oven to 350°F and prepare a 9x13-inch pan with non-stick spray.
  2. Whisk milk, eggs, vanilla, bananas, peanut butter, and maple syrup until combined.
  3. Add oats, salt, peanut butter powder, and protein powder; whisk until smooth.
  4. Pour batter into pan, sprinkle chocolate chips, and bake for 35-40 minutes. Cool on wire rack.
  5. Mix remaining peanut butter with 1 tsp coconut oil; melt chocolate chips with 1/4 tsp coconut oil. Drizzle over baked oats and serve.

Notes

For added flavor, top with fresh berries or nuts.
