Ingredients
  

Bananas
  • 0.125 cup mashed bananas 2 medium-sized ripe bananas
  • 113 grams butter, softened 1/2 cup or 1 stick
  • 150 grams granulated sugar 3/4 cup
  • 100 grams large eggs 2 eggs
  • 60 ml milk 1/4 cup
  • 5 ml vanilla extract 1 teaspoon
  • 185 grams all-purpose flour 1 1/2 cups
  • 5 grams baking soda 1 teaspoon
  • 3 grams salt 1/2 teaspoon
  • 50 grams chopped walnuts 1/2 cup
Optional ingredients
  • 85 grams chocolate chips or dried berries Optional: 1/2 cup

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
  2. Cream butter and sugar until light. Beat in eggs, then add bananas, milk, and vanilla.
  3. Mix dry ingredients separately, then combine with wet ingredients just until combined.
  4. Fold in walnuts and optional ingredients. Pour batter into pan and smooth the top.
  5. Bake for 55-65 minutes until golden and a toothpick comes out clean. Cool before slicing.

Notes

For best results, do not overmix the batter to keep the bread tender.
