One Hour Sourdough Discard Rolls

  • 1 cup lukewarm water
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 1/2 cup sourdough discard, unfed
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon salt
  • 3 1/4 - 3 3/4 cups all-purpose flour, plus more for dusting

Method
 

  1. Whisk water, sugar, and yeast. Let stand until foamy.
  2. Add sourdough discard, melted butter, and salt. Stir to combine.
  3. Gradually add flour until a soft dough forms. Dough should be slightly sticky.
  4. Knead on a floured surface until smooth and elastic.
  5. Place dough in an oiled bowl, cover, and let rise until doubled.
  6. Preheat oven to 375°F (190°C). Grease a 9x13 inch pan.
  7. Punch down dough and divide into 12 equal pieces.
  8. Roll each piece into a ball and place in the pan. Let rise for 10-15 minutes.
  9. Bake until golden brown. Tent with foil if browning too quickly.
  10. Let cool before serving. Brush with melted butter, if desired.

Notes

For a richer flavor, use brown butter instead of melted butter.
