Ingredients
  

Bananas
  • 2 pieces ripe bananas
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups oat flour
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas in a large bowl, then add honey, applesauce, melted coconut oil, and vanilla. Mix well.
  3. Combine oat flour, baking soda, salt, and cinnamon in another bowl, then add dry to wet ingredients and stir until just combined.
  4. Fold in walnuts or chocolate chips if using, then pour batter into the pan and smooth the top.
  5. Bake for 45-55 minutes until a toothpick comes out clean. Cool for 10 minutes before transferring to a wire rack.

Notes

For added flavor, sprinkle with extra cinnamon or top with a drizzle of honey.
