Ingredients
  

Bananas
  • 3 medium extra ripe bananas (mashed)
  • 1 cup white granulated sugar
  • 1/3 cup canola oil
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 1/3 cups all-purpose flour (sifted)
  • 1 tsp baking soda
  • 1/2 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mash bananas and mix in sugar.
  3. Add eggs, vanilla, and oil; stir well.
  4. Mix in sifted flour, baking soda, and salt until just combined.
  5. Pour batter into pan and bake 45-50 minutes.
  6. Cool before slicing.

Notes

Use ripe bananas for best flavor and moisture.
