Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
Wet ingredients
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups oat flour
Optional mix-ins
  • 1/2 cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil until combined.
  3. Add honey, eggs, and vanilla; mix until smooth.
  4. Whisk together baking soda, salt, cinnamon, and oat flour; add to wet mixture and combine.
  5. Fold in nuts or chocolate chips if using, pour into pan, and bake 50-60 minutes.
