Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup brown sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup vegan chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and melted coconut oil until combined.
  3. Add brown sugar, almond milk, and vanilla; stir until smooth.
  4. Stir in baking soda and salt, then fold in flour and chocolate chips.
  5. Pour batter into pan, bake for 50-60 minutes, cool before slicing.
