  • 3 ripe bananas, mashed

  • 1 cup brown sugar, divided
  • 0.5 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. Combine wet ingredients in another bowl.
  3. Combine wet and dry mixtures until just blended. Pour into pan.
  4. Sprinkle remaining brown sugar on top. Bake for 50-55 minutes.
  5. Cool for 10 minutes, then transfer to wire rack to cool completely.
