Method
- Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
- Mix flour and baking soda in a bowl. In a separate bowl, cream butter, sugars, and salt until smooth.
- Add mashed bananas, eggs, and vanilla to the wet mixture. Combine with dry ingredients just until mixed.
- Fold in chopped pecans. Pour batter into prepared pan, top with extra pecans.
- Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.
Notes
Use very ripe bananas for best flavor and sweetness.
