Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
Wet ingredients
  • 1/2 cup unsalted butter (8 tablespoons) – softened
  • 1/3 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon fine salt
  • 2 large eggs – room temperature
  • 3 very ripe bananas (medium/large) - mashed bananas
  • 1 teaspoon vanilla extract
  • 1 cup pecans – coarsely chopped + extra for topping

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
  2. Mix flour and baking soda in a bowl. In a separate bowl, cream butter, sugars, and salt until smooth.
  3. Add mashed bananas, eggs, and vanilla to the wet mixture. Combine with dry ingredients just until mixed.
  4. Fold in chopped pecans. Pour batter into prepared pan, top with extra pecans.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Use very ripe bananas for best flavor and sweetness.
