  • 4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter cut into cubes
  • 1 1/2 cups buttermilk
  • 1/2 cup raisins or currants optional
  • 1 large egg beaten, for brushing
  • Coarse sugar for sprinkling (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender until the mixture resembles coarse crumbs.
  4. Stir in the raisins or currants, if using.
  5. Make a well in the center of the dry ingredients and pour in the buttermilk.
  6. Stir until just combined. Do not overmix.
  7. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick round.
  8. Cut the round into 8 wedges or circles.
  9. Place the scones onto the prepared baking sheet.
  10. Brush the tops with the beaten egg and sprinkle with coarse sugar, if using.
  11. Bake for 15-20 minutes, or until golden brown.
  12. Let cool slightly on the baking sheet before serving.

Notes

For a richer flavor, use brown butter instead of regular butter.
