Cake
  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 Tbsp. ground cinnamon
  • pinch ground cloves
  • 1 cup oil
  • 3/4 cup buttermilk
  • 3 eggs
  • 3 cups fresh carrots shredded
  • 1 cup crushed light pineapple use the juice - do not drain
  • 1 cup coconut shredded
  • 1/2 cup golden raisins
  • 2 cups walnuts and/or pecans chopped) RESERVE 1 cup of nuts for topping
  • 1 Tbsp. spiced vanilla extract or vanilla
Frosting
  • 2 (8 oz blocks) full fat cream cheese softened
  • 1 stick salted butter softened slightly - do not melt
  • 1 tsp. vanilla
  • 2 cups powdered sugar

Notes

For an extra touch, toast the reserved nuts before adding them to the top of the cake.
