  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 cup fresh or frozen blueberries

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas and coconut oil until combined. Add honey, eggs, vanilla, lemon zest, and juice; stir well.
  3. Whisk together gluten-free flour, baking soda, and salt. Gradually add to wet mixture, mixing until just combined.
  4. Gently fold in blueberries. Pour batter into pan and spread evenly.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to wire rack.
