Ingredients
  

Fruits
  • 3 ripe bananas ripe bananas
Dry ingredients
  • 1 cup gluten-free flour blend
  • 1/2 cup almond flour
  • 1/2 cup sugar or honey
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet ingredients
  • 1/4 cup coconut oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
Optional mix-ins
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mash bananas, then mix with sugar, coconut oil, eggs, and vanilla.
  3. Whisk dry ingredients separately, then combine with wet mixture.
  4. Fold in chocolate chips or nuts if desired, then pour into pan.
  5. Bake for 50-60 minutes, cool, then slice and serve.

Notes

Use ripe bananas for best flavor and sweetness.
