  • 3 ripe bananas ripe bananas, mashed
  • 0.25 cup unsweetened applesauce
  • 0.25 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 0.5 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, applesauce, honey, and vanilla in a bowl.
  3. Whisk together dry ingredients and add to wet mixture, mixing until just combined.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 50-60 minutes, cool before slicing.

Notes

Use ripe bananas for best flavor and sweetness.
