  • 2.5 cups all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 1 cup unsalted butter (softened)
  • 2 cups granulated sugar
  • 4 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup whole milk (room temperature)
Frosting
  • 1.5 cups unsalted butter (room temperature)
  • 6 cups powdered sugar (sifted)
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream or milk adjust for consistency
Decorations
  • Pastel gel food coloring (pink, lavender, mint green, light blue)
  • Gold or silver sanding sugar shimmer (optional)
  • Edible pearls or confetti decorations
  • A small Jellycat plush (for cake topper—not edible)

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour cake pans.
  2. Mix dry ingredients and creamed butter, sugar, eggs, vanilla, and milk to make batter. Divide evenly into pans.
  3. Bake for 30 minutes or until a toothpick inserted comes out clean. Cool completely.
  4. Prepare frosting by beating butter, powdered sugar, vanilla, and cream until smooth. Color as desired.
  5. Assemble and decorate the cake with colorful frosting, sprinkles, and Jellycat plush topper.
