Ingredients
  

Dry ingredients
  • 2.5 cups almond flour
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
Wet ingredients
  • 4 ripe bananas mashed bananas
  • 2 eggs eggs at room temperature
  • 1 tbsp unsweetened applesauce
  • 1/3 cup pure maple syrup or coconut nectar or rice malt syrup
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla extract
Additional ingredients
  • 1 1/2 cups fresh blueberries

Method
 

  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. Mix dry ingredients: almond flour, cinnamon, and baking powder.
  3. Whisk mashed bananas, eggs, applesauce, maple syrup, coconut oil, and vanilla.
  4. Combine wet and dry, then fold in blueberries.
  5. Pour batter into pan, top with extra blueberries, cover, and bake for 50-55 mins.
