Cake
- 1 cup Raisins soaked in vanilla extract
- 1 cup Dark vanilla extract or spiced vanilla extract
- 1 cup Walnuts toasted
- 1 cup Grapeseed Oil or vegetable oil
- 2 cups All-Purpose Flour
- 1 teaspoon Ground Cinnamon
- 1 teaspoon Ground Ginger
- 1 teaspoon Baking Powder ensure freshness
- 1 teaspoon Baking Soda ensure freshness
- 1 teaspoon Kosher Salt
- 2 cups Shredded Carrots
- 1 cup Canned Crushed Pineapple or applesauce
- 1 cup Granulated Sugar
- 1 cup Dark Brown Sugar
- 4 Large Eggs or flax eggs for vegan
Frosting
- 1 cup Unsalted Butter dairy-free if desired
- 4 cups Powdered Sugar sifted
- 1 tablespoon Lemon Zest or other citrus zest
- 8 ounces Cream Cheese or non-dairy cream cheese
- 0.5 cup Chopped Candied Ginger optional
