  • 2 pieces ripe bananas mashed until no lumps
  • 1 ½ cups all-purpose flour spooned and leveled
  • ½ cup granulated sugar or brown sugar
  • ¼ cup melted unsalted butter cooled slightly
  • 1 large egg at room temperature
  • 1 teaspoon baking soda not powder
  • 1 teaspoon vanilla extract the good stuff
  • ½ teaspoon salt just enough to enhance flavors

Method
 

  1. Mash bananas until no lumps remain. Mix with melted butter, egg, and vanilla until smooth.
  2. In a separate bowl, whisk together flour, sugar, baking soda, and salt.
  3. Fold dry ingredients into wet mixture until just combined; avoid overmixing.
  4. Scoop batter into muffin tin, filling about ¾ full. Bake at 350°F (175°C) for 20 minutes.
  5. Cool for 5 minutes in the pan, then transfer to a rack. Serve warm or at room temperature.
