Method
- Mash bananas until no lumps remain. Mix with melted butter, egg, and vanilla until smooth.
- In a separate bowl, whisk together flour, sugar, baking soda, and salt.
- Fold dry ingredients into wet mixture until just combined; avoid overmixing.
- Scoop batter into muffin tin, filling about ¾ full. Bake at 350°F (175°C) for 20 minutes.
- Cool for 5 minutes in the pan, then transfer to a rack. Serve warm or at room temperature.
