Method
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together buttermilk and egg.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Turn the dough out onto a floured surface and pat into a 1-inch thick circle.
- Use a 2-inch round cutter to cut out scones. Re-form scraps as needed.
- Place scones on the prepared baking sheet.
- Brush the tops of the scones with melted butter.
- Bake for 15-20 minutes, or until golden brown.
- While the scones are baking, prepare the marmalade butter: beat together softened butter and marmalade until smooth.
- Serve scones warm with marmalade butter.
Notes
For best results, use very cold butter and do not overmix the dough. This will ensure a tender and flaky scone.
