Ingredients
  

Scones
  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 1 cup buttermilk
  • 1 large egg, lightly beaten
  • 2 tablespoons melted butter, for brushing
Marmalade Butter
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/4 cup orange marmalade

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, whole wheat flour, sugar, baking powder, baking soda, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together buttermilk and egg.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Turn the dough out onto a floured surface and pat into a 1-inch thick circle.
  7. Use a 2-inch round cutter to cut out scones. Re-form scraps as needed.
  8. Place scones on the prepared baking sheet.
  9. Brush the tops of the scones with melted butter.
  10. Bake for 15-20 minutes, or until golden brown.
  11. While the scones are baking, prepare the marmalade butter: beat together softened butter and marmalade until smooth.
  12. Serve scones warm with marmalade butter.

Notes

For best results, use very cold butter and do not overmix the dough. This will ensure a tender and flaky scone.
