Method
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in raisins (if using).
- Add buttermilk and stir until just combined. Do not overmix.
- Turn dough out onto a lightly floured surface and gently pat into a 1-inch thick circle.
- Use a 2-inch biscuit cutter to cut out biscuits. Reroll scraps as needed.
- Place biscuits on the prepared baking sheet.
- Bake for 15-20 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
For a richer flavor, brush the tops of the biscuits with melted butter before baking.
