  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 cup granulated sugar
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1.75 cups buttermilk
  • 1/2 cup raisins (optional)

Method
 

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in raisins (if using).
  5. Add buttermilk and stir until just combined. Do not overmix.
  6. Turn dough out onto a lightly floured surface and gently pat into a 1-inch thick circle.
  7. Use a 2-inch biscuit cutter to cut out biscuits. Reroll scraps as needed.
  8. Place biscuits on the prepared baking sheet.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Let cool slightly before serving.

Notes

For a richer flavor, brush the tops of the biscuits with melted butter before baking.
