  • 3.5 cups gluten-free all-purpose flour (ensure it includes xanthan gum)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1.25 cups granulated sugar
Wet Ingredients
  • 14 tablespoons unsalted butter (melted and cooled)
  • 3 large eggs (room temperature, lightly beaten)
  • 2 teaspoons vanilla extract (pure)
  • 1 cup sour cream (room temperature)
  • 1.5 cups mashed ripe bananas (about 3 medium bananas)
  • 0.5 cup brown sugar (packed)
  • 2 tablespoons ground cinnamon

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix dry ingredients in a bowl. In another bowl, combine wet ingredients including mashed bananas and cinnamon.
  3. Gradually add dry ingredients to wet mixture, stirring until just combined.
  4. Pour batter into prepared loaf pan, swirl in cinnamon sugar mixture for a cinnamon swirl effect.
  5. Bake for 60 minutes or until a toothpick inserted in the center comes out clean. Cool before slicing.
