Ingredients
  

Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.75 cup vegetable oil
  • 4 large eggs
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • 0.5 cup chopped walnuts or pecans
Frosting
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3-4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice Optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour pans.
  3. Whisk dry ingredients in a large bowl.
  4. Whisk wet ingredients in a separate bowl.
  5. Add carrots and pineapple to wet mixture.
  6. Gradually add dry ingredients to wet mixture, stir gently.
  7. Fold in nuts, if using.
  8. Divide batter evenly between pans. Bake for 25-30 minutes.
  9. Cool cakes completely before frosting.

Notes

For a richer flavor, try using brown butter in the frosting.
