Method
- Preheat oven to 350°F (175°C).
- Grease and flour pans.
- Whisk dry ingredients in a large bowl.
- Whisk wet ingredients in a separate bowl.
- Add carrots and pineapple to wet mixture.
- Gradually add dry ingredients to wet mixture, stir gently.
- Fold in nuts, if using.
- Divide batter evenly between pans. Bake for 25-30 minutes.
- Cool cakes completely before frosting.
Notes
For a richer flavor, try using brown butter in the frosting.
