Method
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray.
- In a large bowl, whisk together pancake mix, milk, and egg until smooth.
- Stir in the crumbled beef sausage and shredded cheese (if using).
- Pour the mixture evenly into the prepared muffin tin cups, filling each about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
- Serve warm or store in an airtight container in the refrigerator for up to 3 days.
Notes
For a sweeter muffin, add a tablespoon of maple syrup to the batter.
