Ingredients
  

Dry ingredients
  • 1.5 cups whole wheat or oat flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp fine sea salt
Wet ingredients
  • 3 overripe bananas mashed bananas
  • 1 cup low-fat cottage cheese well-drained and room temperature
  • 2 large eggs
  • 2 tbsp honey or maple syrup optional
  • 1 tsp pure vanilla extract
  • 0.25 cup vanilla whey or plant-based protein powder optional
  • 2 tbsp nut butter optional
Optional toppings
  • A handful chopped nuts or dark chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.
  2. Mash bananas and drain cottage cheese. Whisk eggs, cottage cheese, honey, and vanilla until smooth.
  3. Mix in mashed bananas, then fold in flour, baking soda, baking powder, salt, and protein powder. Add nuts or chocolate chips if desired.
  4. Bake for 50–55 minutes until a toothpick comes out clean. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

Using well-drained cottage cheese prevents excess moisture in the bread.
