Ingredients
  

Dry ingredients
  • 1.5 cups whole wheat or oat flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp fine sea salt
Wet ingredients
  • 3 overripe bananas mashed bananas
  • 1 cup low-fat cottage cheese well-drained and room temperature
  • 2 large eggs
  • 2 tbsp honey or maple syrup optional
  • 1 tsp pure vanilla extract
Optional protein boost
  • 0.25 cup vanilla whey or plant-based protein powder
  • 2 tbsp nut butter optional
Chopped nuts or chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.
  2. Mash bananas and drain cottage cheese.
  3. Whisk eggs, cottage cheese, honey, and vanilla until smooth. Mix in bananas.
  4. Stir in flour, baking soda, baking powder, salt, and protein powder. Fold in nuts or chocolate chips if using.
  5. Pour batter into pan, bake 50–55 minutes. Cool before serving.

Notes

Using ripe bananas and well-drained cottage cheese enhances flavor and texture.
