Method
 

  1. Preheat oven to 350°F. Toast walnuts on a baking sheet for 8–10 minutes, then cool and chop.
  2. Melt coconut oil, then grease a loaf pan. Mash bananas and whisk in egg, maple syrup, yogurt, vanilla, and cooled coconut oil.
  3. Mix in baking soda, cinnamon, salt, then fold in flour until just combined. Fold in chopped walnuts and ¾ cup blueberries.
  4. Transfer batter to pan, sprinkle remaining blueberries on top, and bake at 375°F for 50 minutes, tenting if edges brown too fast. Cool before serving.

Notes

You can substitute blueberries with raspberries or banana chunks, and add chocolate chips or nuts for variety.
