Ingredients

  • 1 lb boneless, skinless chicken breasts cut into 1 inch cubes
  • 1/2 tablespoon avocado oil
  • 1/4 cup coconut aminos
  • 1 tablespoon honey
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon ground ginger
  • 1 tablespoon garlic cloves (minced)
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon black pepper
  • 1 teaspoon lime zest zest of one lime
  • 1 tablespoon lime juice juice of one lime
  • 1 tablespoon sesame seeds for garnish
  • 2 cups cooked green beans
  • 1 cup cooked white rice

Method
 

  1. Cook rice and green beans according to package instructions.
  2. Sauté chicken in avocado oil until browned, about 10-12 minutes.
  3. Whisk together coconut aminos, honey, sesame oil, ginger, garlic, vinegar, lime zest, and lime juice to make the sauce.
  4. Pour sauce into the pan with chicken and cook for 3-5 minutes until thickened.
  5. Serve chicken over rice and green beans, garnished with sesame seeds.

Notes

For extra flavor, toast sesame seeds before garnishing.
