Method
- Preheat oven to 350°F (175°C). Line a muffin tin or grease well.
- Whisk together oat flour, baking soda, baking powder, and salt.
- Mash bananas. Add peanut butter, maple syrup, applesauce, vanilla, and dairy-free milk. Stir well.
- Pour wet into dry ingredients and mix until just combined.
- If using, fold in chocolate chips.
- Fill each muffin liner about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick comes out clean.
- Cool in the tin, then transfer to a wire rack to cool completely.
Notes
For best results, use very ripe bananas and be careful not to overmix the batter.
