Ingredients
  

Fruits
  • 3 ripe bananas bananas, mashed
  • 2 large eggs eggs
  • 0.25 cup honey or maple syrup
  • 0.25 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 cup almond flour
  • 0.5 cup gluten-free oats
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, honey, melted coconut oil, and vanilla until combined.
  3. Combine dry ingredients: almond flour, oats, baking soda, salt, and cinnamon.
  4. Gradually add dry to wet, fold in nuts or chocolate chips if desired, then pour into pan.
  5. Bake for 45-55 minutes, cool in pan for 10 minutes, then transfer to wire rack.

Notes

For extra flavor, add a dash of nutmeg or a handful of dried fruit.
