Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix mashed bananas, eggs, honey, melted coconut oil, and vanilla until combined.
- Combine dry ingredients: almond flour, oats, baking soda, salt, and cinnamon.
- Gradually add dry to wet, fold in nuts or chocolate chips if desired, then pour into pan.
- Bake for 45-55 minutes, cool in pan for 10 minutes, then transfer to wire rack.
Notes
For extra flavor, add a dash of nutmeg or a handful of dried fruit.
