  • 1.5 cups whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 0.25 tsp salt
  • 0.5 cup unsweetened applesauce
  • 0.25 cup coconut oil, melted
  • 0.25 cup maple syrup or honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 0.5 cup chopped walnuts or pecans (optional)
Frosting (optional)
  • 4 oz cream cheese, softened
  • 0.25 cup plain Greek yogurt
  • 2 tbsp maple syrup or honey
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Combine applesauce, coconut oil, maple syrup/honey, eggs, and vanilla extract. Mix well.
  4. Add wet ingredients to dry ingredients and stir until just combined.
  5. Fold in grated carrots and nuts (if using).
  6. Pour batter into the prepared pan and bake for 30-35 minutes.
  7. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. Prepare frosting: Beat cream cheese, Greek yogurt, maple syrup/honey, and vanilla until smooth.
  9. Frost the cake once it's completely cool.
  10. Slice and enjoy!

Notes

For a richer flavor, consider adding raisins or pineapple to the batter.
